We've spent a lot of time with Engram Points on ARK: Survival Evolved. There simply aren't enough Engram Points where the max level sits, and with the developers constantly adding new Engrams, I doubt it will ever be possible to legitimately cap out.
If you've played ARK for any considerable amount of time, you've probably developed a sneaking suspicion that you're not going to be able to learn every Engram in the game.
